Under pressure
Espresso lots are dialled each morning against our house water recipe (80 ppm, balanced chlorides). Shots are 18–20g in, 36–40g out, target 28–32 seconds. Milk drinks use the same lot unless marked otherwise on the board.
Slow read
Filter service is where origin character shows most clearly. We offer V60 by cup and batch brew for pairs. Grind dates are written on the service card — if you prefer a finer or coarser read, mention it when ordering.
Pastries and light bites
Baked fresh by partner kitchens each morning. Allergen sheets at the counter — contains gluten, dairy, tree nuts, and soy depending on item.
Bags with the same codes
Retail bags mirror the bar lots whenever inventory allows. Each bag carries the lot code, roast date, and brew guide QR linking to our cupping notes. Whole bean only; we grind on request if you plan to drink within 48 hours.

How to read the board
Lot codes follow the format BT-YYMM-ORIGIN. The four-digit segment after BT indicates arrival month; the origin suffix is our shorthand for the region or cooperative. Process and elevation appear on the line below each name. If two lots share a origin suffix, they are different arrivals — ask which roast date is fresher if you are buying retail.
Milk drinks inherit the espresso lot unless the board marks a split. Filter-only lots are labelled "filter" and may not perform well under pressure — baristas will say so if you ask for an espresso version. Seasonal pastries rotate weekly; the counter list is the authority, not this page.
Prices include GST. We do not add service charge. Reusable cup discount applies at payment — mention it before we ring up.
