Why we built a coffeehouse around lot codes instead of slogans.

From cupping table to storefront

BrewTrace began as a weekly cupping circle among three baristas who met while working in Singapore's central business district. They shared a frustration common in specialty rooms: the coffee on the cupping table was excellent, but the language on the menu board did not carry the same precision into service. Farm names were shortened, processes were omitted, and guests who asked "where is this from?" received answers that sounded rehearsed rather than tasted.

In 2024 the group registered BrewTrace Pte. Ltd. and signed a lease on Telok Ayer Street — a location chosen for foot traffic that includes both office workers and neighbourhood regulars, and for shophouse character that could hold a darker, quieter room without feeling like a nightclub. The fit-out prioritised the cupping theatre: a long bar with sight lines to the grinder deck, pin boards for lot sheets, and a trace rail motif that runs the length of the left wall with codes T-01 through T-06 marking stages from cherry to cup.

We opened to the public in early 2025 with four lots on the board and a rule that still holds: no coffee is served until it has been scored internally and assigned a BrewTrace lot code. That discipline slows our menu rotation compared with shops that change signage daily, but it keeps what we say aligned with what we measure.

What trace means here

Trace, for us, is a paper-and-palate trail — not software, not supply-chain tracking for its own sake. Each lot sheet lists exporter, mill, process, elevation, harvest month, roast date, and cupping scores against our house form. Baristas rehearse those sheets in Monday training so service language matches the table.

We buy primarily through long-term importers who provide sample integrity and ship in breathable bags. When a lot underperforms on re-cup after arrival, it does not reach the bar — we would rather run one less espresso option than serve a coffee we cannot describe accurately.

Retail bags use the same codes as the bar. If you take a bag home, the QR on the label opens the same notes your barista read that morning. Consistency between in-house and take-home is non-negotiable for us.

CHAPTER · 03

Team and values

Our team is small — head barista, two service baristas, a pastry coordinator, and founders who still cup every Tuesday. Hiring prioritises sensory vocabulary and honest communication over latte art competition scores. We pay above Singapore median for F&B roles and publish tip pooling rules on the staff board.

Values are practical: readable provenance, calibrated extraction, respectful pacing, and a room where asking questions is expected. We do not perform ceremony for its own sake; if a guest wants a fast espresso and silence, they get it. If they want a twenty-minute filter conversation, we make time when the bar is not stacked.

BrewTrace is independent — no franchise, no investor deck language, no plans to become a "lifestyle brand." We intend to remain one room in Telok Ayer, doing one thing with full attention.
